Big Oyster Brewery opens in Milford

MILFORD – Just in time for summer demand, Big Oyster Brewery joined the Milford community.

Big Oyster Brewery added to their location in Lewes to a second restaurant at the Southern Delaware Golf Course in Milford.

The restaurant is in the FINS hospitality group. Their umbrella covers Big Oyster Brewery along with Fins Ale House & Raw Bar, Claws Seafood House and JR’s Seafood Shack.

They were very pleased with the turnout they have had so far.

“To say the least we have been slammed,” said Jim Roblero, the marketing specialist for FINS Hospitality. “We have been just as busy as we are in Lewes, so it’s a promising sign I’d say.”

The group felt that Big Oyster was the missing piece of what Milford needs.

“It seems like Milford has been missing something like this,” said Mr. Roblero.

Even with a good turnout so far, they are awaiting the completion of a few more components to make the restaurant perfect.

“We are still waiting on the brewery side and outdoor bar to be finished,” Mr. Roblero. “That is something to look forward to on the side of the customer.”

They will also have a TopGolf Swing Suite. This is a social experience in a lounge setting that provides food and drinks.

The lounge has a large screen to play virtual golf games. The simulator is something for golfers and non-golfers alike.

“We have never owned a golf simulator before, so we are trying to figure out the best system for that,” said Eric Camper, the head brewer at Big Oyster Brewery.

Upon completion of the renovations, they hope to provide an even better experience for guests.

“Hopefully pretty soon we can start to get some live music in there and having more events,” said Mr. Roblero. “We are going to be hosting golf tournaments which will also be a big draw for the restaurant and the golf course.”

This includes the beer.

They are hoping for the brewery at the Milford location to be completed in about a month. The goal is to create specialty beers for the location with the brewery on site.

“We are going to be creating a bunch of different recipes and releases for Milford and they will only be debuted there,” said Mr. Camper. “We have 16 lines with 4 beers that change for time to time.”

To pair with the brewery, the outdoor bar area they hope will be a highlight for guests.

“The outdoor bar will be under cover, seat around 50 to 60 people, have lots of TVs and right on the first hole to watch people tee off,” said Mr. Camper

The new location will have a similar vibe as the Lewes location.

“We did not change too much because we want you to have the same experience that you do in Lewes with just a different setting,” said Mr. Roblero.

The setting of the restaurant will include elements of Milford’s history with photos and memorabilia that symbolize the town.
