In cooperation with the Chesapeake Bay Maritime Museum, Olivins Fine Olive Oils and Vinegars of St. Michaels has completed the aging of its first batch of Rosie Parks balsamic vinegar aboard the museum’s 1955 skipjack Rosie Parks. CBMM Boatshop Manager Michael Gorman, left, and Olivins owner Bill Acosta, right, brought up the barrels of Rosie Parks-aged balsamic from the skipjack’s hull in late November, where it had aged with the motion of the boat for nearly five months.

The aged balsamic is now available in limited quantities at Olivins and the museum’s store, with a portion of the proceeds donated to CBMM. The Rosie Parks was built in Wingate, Maryland, in 1955 by Bronza Parks, and built for his brother, Orville Parks.  She is owned by CBMM and her hailing port is Cambridge, Maryland. Rosie Parks was purchased by CBMM in 1975 from Orville Parks, and she is the first skipjack to be preserved afloat by a museum. On November 2, 2013, Rosie Parks was relaunched after a three-year restoration.
